High fidelity
The low level of competition, coupled with the trend towards more nutritious and balanced meals, makes it easier to build customer loyalty and strong brands among the pioneers in the market. Although the initial investment in the gourmet segment is higher, in this case it allows higher profit margins to be established compared to conventional restaurants.
Entry barrier
Some regions of Brazil are famous for their healthy lifestyles. This is the case in Rio de Janeiro, with its juice houses, for example. But there are few entrepreneurs who combine in-depth knowledge of the health and wellness market and gourmet restaurants in Brazil. Another barrier to entering the market is the shortage of skilled labor.
